飲食對人健康很重要,人之生活的空間也很重要.

Datin Chris Salleh’s Breast Cancer Fundraiser Function, which Chef Wan and Chef Poh Ling Yeow took part in holding a cooking demonstration for 50 SA residences to raise funds for the cause. October is recognised as National Breast Cancer Month. It is an annual international health campaign organised by major breast cancer charities every October to increase awareness of the disease and to raise funds for research into its cause, prevention, diagnosis, treatment and cure.

Chef Wan and Chef Poh’s fundraiser highlighted the importance of cuisine and food to our health and also in our lifestyle. It is important we realise how important health eating is and the effect it has on our life.  With an appropriate diet and active lifestyle, people can maintain a healthy and long life span, however with the wrong concept of eating and cooking habits, there is a possibility of disease or the unfortunate concept of dying at a premature age.

Adelaide City is a unique city providing residences with easy access to fresh fruit and vegetables. In Chinatown, we have the unique privilege of having Central Market next door with fine foods and produce. It is definitely a perk. 

Chef Wan had only been in Adelaide for a few days and he was able to integrate and merge into the unique Adelaide lifestyle. At the Breast Cancer Fundraiser Function, Chef Wan shared his knowledge of embracing life and stressed the importance of healthy eating. Chef Wan believed that the first step of leading a healthy lifestyle is to change inappropriate eating habits – “to stay healthy, you need to protect your kidneys”.

Together with Chef Poh they used each other’s advantage of techniques and skills to produce for their audience some amazing Malaysian cuisine food for their guest of 50 people.  And they all shared in the experience together.

民是以食為天,飲食對人類健康和生命的重要性。正確飲食觀念,可使人健康長壽,錯誤的飲食觀念,則導致人類疾病或未老先衰。

阿德萊得市的生活空間,是一座充滿生活氣息的城市,街道熱鬧而不覺喧嚷,樓房陳舊而不顯頹敗。

中國城與Central Market 開市時,車水馬龍,駕著嬌車的人往來如織,一百幾十年的城市,大部分人們流露出一種教養──禮貌、謙讓, 感到一種生活素質的舒暢。

來阿德萊得市僅僅幾天,每天這種迎面而來的氣息,Chef Wan喜歡這座城市,喜歡這裡的新舊朋友,我也感染他愛說笑的個性。採訪中,他拋出一些笑料連綿,喜欣開懷的大笑。

九月十日(星期六),下午一二時開始,這次訪問是在東 區的Wanson AvenueRose Park , Honorary Consul Datuk Hassan Salleh與夫Christine Salleh)與Buble小組人員為Breast Cancer Fund Raising (乳癌生存者擧行樂捐)据了解,去年,他們募捐到五千多元澳幣。

此次擧行樂捐,吸引至少50位人士,廚師、美食家、美食作者等專才聚集,向全阿德萊得市與南澳地區推廣大馬各族美食。

【南澳時報記者】電視螢幕前的 Chef Wan擁有一手好廚藝,愛拋笑彈,讓人歡欣。私底下,Chef Wan同樣愛說笑,採訪中不時拋出一些笑料,讓人開懷大笑,喜戯連綿。Chef Wan的平易近人。Honorary Consul Datuk Hassan Salleh(主要邀請Chef Wan來南澳此行的人)說Chef Wan一說話兩個小時才停下來。
在馬來西亞協會晚宴上,不光是記者大開眼界,大眾及副縂督Hieu Van Le AO也證明拿督Hasson的話是正確,讓人又驚又喜。
Chef Wan擁有拿督頭銜,但他不是高高在上的廚師,他還是要人人暱稱ChefWan

近一百五十人共聚一場,緊湊熱烈、富有張力的歡迎晚宴,名人,名廚,政要人士,美酒、美食當前,讓人暢飲大食,開懷大笑,難得人生幾何。
馬來西亞協會會長Dr.EvelyneYap在該晚宴上致開幕詞,歡迎ChefWan(為大馬美食旅遊大使)來到南澳州。據了解,大馬旅遊部長拿督黃燕燕頒發了獎狀於ChefWan,委任他為大馬首位2010/2012美食旅遊大使。
副縂督Hieu Van Le AO在當晚宴上發表講話,歡迎Chef Wan以及大家來到這晚宴,因爲,澳洲有了多元文化政策,多民族社會管理多元文化性的公共政策,不同文化之間的相互尊重和寬容,各有其獨特性,美食有其獨特性,接納其他民族文化特性,澳洲社會因此而多彩多姿。今晚,歡迎Chef Wan有其重大的意義,我們再次歡迎他。
Chef Wan發表講話,從小時候開始,到大學,然後;這一路走來,從一個會計師變成一個廚師,在20幾年前是一個不得了的決定。
在那個年代,亞洲地區國家的人,學校成績好的小孩,只有三個職業選項--律師、醫生、會計師。他234歲時在銀行工作,同時參與直銷生意,成績斐然。
在銀行當會計師的時候,Chef Wan每個星期的午餐時間,都要到酒店附設的蛋糕店,看看他喜愛的漂亮蛋糕。“沒有人激勵我當廚師,看見這麼多美麗的食物,已鼓舞了我。”
Chef Wan說:因爲不愛幫人數錢,囘來數自己的錢,所以他決定改行當一個廚師。
Chef Wan享受自己所做的一切,沒有給自己壓力,只想要成為自己想要成為的人,過自己想要過的生活。
人們看見Chef Wan的成功,他的光環,其實,他也碰過不少挑戰,不少背後的指指點點和妒嫉。Chef Wan不當這些是一回事,不必反擊,笑笑就好。
Chef Wan說:“自己的出發點是好的,心是乾淨淨的,為國家民族做事,那就是最好的。是最好的方法,上蒼會站在你這邊。”
Chef Wan活得快樂,他的確快樂,很多人只看到,他是電視烹飪節目名主持人,出版多本食譜,獲得許多飲食專業文憑,“亞洲美食頻道”御用廚神。在法國的巴黎,獲得最佳明星廚師大獎以及最佳慈善食譜大獎。以爲那是,他在事業上很成功,才快樂。可是,Chef Wan說真正快樂的理由,是因為他按照自己的夢想生活,快樂而知足。Chef Wan 說“知足很重要,終極成功和成就。”
這幾天隨他而訪問,這位“世界級的廚師”給我留下了深刻的印象-----那是快樂的Chef Wan
那天晚宴,還有Chef Poh在,他們兩如天空上兩顆星星,今夜在南澳州夜空相遇,閃爍發光,四射光茫,贏人耳目。

The Honorary Consul for Malaysia, Datuk Hassan Salleh hosted a welcoming BQQ at his home for International known Datuk Redzuawan Ismail aka Datuk Chef Wan. 
Datuk Chef Wan is an Actor, a TV Host, a popular Entertainer, an enthusiastic and vibrant Entrepreneur and is the Food Ambassador of Malaysia.He has travelled around the world introducing and promoting Malaysian Cuisine. With his wicked personality, he is bringing Malaysian food forward onto the international stage.
Both the host and guests were very happy at this lovely intimate BBQ and welcomed Chef Wan wholeheartedly to Adelaide. This intimate BBQ was a wonderful occasion for everyone to come together and build as well as strengthen relationships. Special acknowledgement goes to Datuk Hassan Salleh and his wife, Datin Christine (Chris) for hosting this wonderful event. 
SA Chinese Weekly is proud to have had the opportunity to exclusively report on Chef Wan’s visit to Adelaide and will be conducting a series of reports of Chef Wan’s activities in SA.

他是電視烹飪節目的著名主持人,出版過多本食譜,獲得許多飲食專業文憑,更成為“亞洲美食頻道”御用廚神。
2009年,在巴黎榮獲最佳明星廚師大獎以及最佳慈善食譜大獎。(書名:Sajian Tradisi-Traditional delicacies)。
Chef Wan也是大馬的美食大使,多次代表大馬國家到世界各地,讓世界認識大馬,也讓大馬美食登上世界的舞台。
這次,他來到阿德萊得訪問,后面出力最大,同時,花了精力與時間最多的是大馬的Honorary Consul Hassan Salleh 及夫人。
九月八日(星期四)晚為 Chef Wan 洗塵是在Hassan的官邸,記者與朋友們與主人同 Chef Wan歡樂,過著美好的晚宴,其中Chef Wan不時拋出笑料,讓人們笑聲連連,氣氛非常融合,友誼建立,了解與信心,是個難得主客盡歡的晚宴。
當晚,出席華人朋友有南澳愛活動人士George Chin 與夫人 ,Christina Yeow , 葉浩鵬律師與Partner,與南澳時報社長潘家發,同近30多位澳洲朋友。

I am 21 and have been out of the raging hormones era of my teenage life for a while now.  I feel more carefree then what I did in high school.
There are no more dramas about who is dating who, no more concerns of which group I am in with to cement my social status, no more concern about what I should wear to school each day. However, the awkward age of being a teenager, doesn’t seem that far away.
Grade 9 was the final year I attended an all-girl school. At an all-girl school, I found that everyone around me was so concern with body image. Every girl would give the same compliment to each other “you’re so skinny” “oh no, I’m nowhere near as skinny as you!” and it would be a vicious circle.
Body image was definitely something that is concerning for a girl and we always pick on the tiny things, which we believe are big deals.
“I´m short, I´m fat, my nose is too big!”
In health studies, we were taught about the effects of alcohol, teen pregnancy, drug addictions, but we were never taught how to appreciate ourselves and what makes us unique. In June 2011, Mission Australia conducted their annual motional youth survey of 50,000 participates and found that the top rate concern for youth was Body Image.
Because in our heads we are told that if we don’t have these aspects in the right proportion, we won’t be happy. No one will love us. I won’t be beautiful.
Here is a tip to every guy out there reading this article:
“No matter how old a woman may be, whether she is 20 or 60. Inside she will still be the same awkward and insecure teenage girl.”
When I was 16 years old, I was an awkward glasses wearing girl with a mouth full of metal. I went to a co-education high school from grade 10-12 and grew up around some (thankfully) decent boys in high school, where I learnt how to interact and hold my own around them. I wasn’t afraid to debate with them in classes; I could joke around and tease them.  I could hold my own.
I have learnt over time and now at this age of 21, it is true what those cheesy TV dramas tell you confidence, intelligence and the ability to hold oneself in a conversation is what makes you beautiful.
In grade 5, I moved school from a co-ed primary school to an all-girl school. I came back to my old primary school to visit and I saw a group of boys that were in my grade. The group of boys walked up to me, only one actually spoke to me. I remember this moment well, he walked around me and circled around me, then asked me the question, which school was I attending?, I replied with the school I had moved to.
He stared at me and said “you’re so ugly’
That statement hurt. That really hurt, because that boy when we were in primary school I considered to be a “friend’ of mine. Boys can be very cruel.
I do believe that as you grow order you eventually grow into your face and features. What was once a big nose becomes in proportion to your face, you accept that being short gives you the advantage of wearing killer high heels and how much you weigh becomes just a number and does not define who you are or what you are capable of.
But I say this knowing full well that I was worried and paranoid all through my teenage ages about these aspects of my life.
Later in grade 12, I went to a high school party and the boy from primary school was there. Instead, things were different, I didn’t have that horrible bob haircut, I was wearing contact lenses and I didn’t have braces. He came up to me during the party and we started chatting, he asked me for my phone number.
I was surprised because it was the last things I was expecting and I replied:
“you don’t remember me do you?”
He paused and I could see in his face the moment in his brain when it clicked and he remembered me and what he had said to me many years ago and he apologised.
Body image is based on other people’s opinion and that should not be the case.
As a parent one should consider that girls take to heart what their mothers says about their bodies, their daughters, those of strangers and celebrities. Ones daughter will notice if the mother exercises obsessively, diet constantly or make derogatory comments about their own appearance. It should not be a surprise to assume that mothers are the most influential role models in regard to body image for a girl.
A father plays equally influential roles in shaping their daughters’ self-image because a daughter will learn how to relate to men by the way they interact with each other. This is why it’s critical that fathers should rethink what they say to their daughters in regard to their physical appearance. You should pause and think “what will this comment do?”
There is this great quote by the infamous Marilyn Monroe said:
“No one ever told me I was pretty when I was little, every little girl should be told they are beautiful, even if they’re not”
My advice:
Like everything else, you grow into your face, you grow into your features and when you are 21 hopefully you won’t be worried about these features as you once were.
From my experience, if you act confident and can hold your own in conversation you will wow everyone you meet.
It does sound corny and cliché, but there is a reason why you hear it so often. Because it actually works.

As a young Australian, one thing is clear about Australia. We are a young and diverse nation and many different Australian all come from different cultures.
Since we are so diverse as an international student I can imagine you won’t ever meet a “typical” Australian but in fact encounter a range of different people with very different social customs, habits and perspectives on life, which could possibly be very different from your own.
Australia has a music scene, which is relatively young and is targeted towards the younger demographic. Most genres include rock, jazz, pop, dance/electronic, country, hip hop, classical and my personal favourite indie, which is very popular.
In Adelaide, you can listen to live mainstream artists such as Katy Perry and Lady Gaga when they come on tour at the newly redeveloped Entertainment Centre. However, Adelaide also has the local music scene such as DJs and live bands in pubs and clubs all around the CBD.
Australia is extremely diverse in terms of ethnicity, with immigrants from a huge range of countries contributing to the cultural life and atmosphere in many different areas.
Australia has a vision of “fair go” for everyone and Australian are tolerant and accepting of people from other cultures.
Immigration been a huge factor for our country, particularly (and it is my favourite) food. In the past, Australian food was heavily influences by British food. The original settlers who came from the UK brought over with them food, which they had grown up with e.g. steaks, roast and still to this day when new immigrants come to Australia they bring their food, which they have grown up with.
In Adelaide almost any kind of food is available, if you know where to find it and as a result as Australians we have become more adventurous in terms of what we eat. We have choices between: Thai, Indian, Italian, French, Greek and Lebanese food, which are all available and extremely popular. I would recommend going on the website: http://www.urbanspoon.com/ and also download the iphone application.
This website and iphone application is a dream. Many times my boyfriend and myself have found ourselves wondering what to eat for dinner.
The conversation usually is along the lines of:
“I want something nearby”
“I want something cheap”
“I want Italian food”
With Urbanspoon, you can click on the particular settings you want and they will find you the most ideal restaurant.
Example:
If I’m looking for a cheap meal in the CBD, I can adjust those settings on Urbanspoon to find a list of restaurants.
Urbanspoon also can find you a restaurant if you have special request e.g. a restaurant which is gluten-free friendly, has free wi-fi, vegetarian friendly, a place with live music or romantic.
The wonders of the internet.
In terms of alcoholic drinks, Australia in a country of beer lovers and overtime people who are also wine lovers as well. Some of the most popular Australian beers include VB (Victoria Bitter), Tooheys and Carlton. Foster’s, while popular overseas, is not nearly as popular in Australia. However, personal I am a Heineken or Corona Beer drinker but yet again, the amazing thing about Australia culture; we can get along of fine imported beers and wines from all over the world.
Beer is heavily incorporated into our pub culture, which will be touched upon in next Wednesday’s edition.

作為一名年輕的澳洲人,我們看到澳洲有一點特徵非常明確。澳洲是一個年輕、多元化的國家,許多不同的澳洲人來自不同的文化背景。
由於澳洲的多元化,我能夠想像國際留學生可能永遠也無法遇到一個“典型的”澳洲人;實際上,你們會看到各種不同的社會風俗、習慣和對生活的觀點,這些可能與你自己的背景差異很大。
曾經有留學生表示說,很難融入澳洲文化。其實仔細觀察一下,不難發現身邊的種種細節。比如,音樂是許多年輕人都喜歡談論的話題。澳洲擁有豐富的音樂文化,並且這種文化相對年輕,而且主要針對年輕人群。主要的音樂風格包括搖滾、爵士、流行、舞蹈/電子、鄉村、嘻哈、經典等。筆者本人最喜歡的是獨立流行樂,這種音樂風格目前很流行。
年輕的留學生朋友們注意了,在阿德萊德,你可以嘗試一些主流藝人的音樂,如Katy PerryLady Gaga,兩人都計劃到新近重新裝修的娛樂中心開巡演。同時,阿德萊德也有一些本土的音樂活動,例如市區CBD的許多酒吧和俱樂部都會有DJ和樂隊表演。

在五味之中,最與夏季匹配的滋味是酸,尤其是​​那種清涼的酸。這種酸不是醋的味道,而是檸檬、經過醃漬的泡菜,或是別致的植物香料,惹動著我們的舌尖。
這些酸味配上東南亞特產的辣椒,就形成一種帶著清涼與新鮮的酸辣,細細回味還有些微甜。這個夏天,高溫酷熱,清淡適中,酸辣甘甜的越南菜毫無疑問地再次挑動了我們的味蕾。 Pho Hong Tam的那種清甜越南味道也成爲我們的首選。
由於南澳夏季天氣酷熱,Pho Hong Tam的老闆也著重介紹了酸辣開胃的越南特色菜。例如這裡的“越南蔗蝦”,是把去了殼的鮮蝦肉,剁碎,打成蝦膠後,裹在甘蔗枝上置於鍋裏油炸而成。外皮金黃酥脆,蝦肉由於吸收了甘蔗的清甜,既香,又鮮、嫩。
越南菜和其他東南菜係一樣,喜歡用各種各樣的香料。而老字號Pho Hong Tam的老闆也摸索出了獨門秘製的一系列醬汁,比如XO醬、沙爹醬等味道復雜得來又夠獨特,與食材搭配得剛剛好。
評價一位正宗越南菜廚師的水平,就得從河粉開始。開胃、清火,營養不油膩,再加上慢火熬十多個小時以上的骨頭湯,讓每一碗河粉都鮮美異常。
這裏主打的越南河粉,按照法式越南做法,料足,香料特別重手。越南河粉最美味所在是湯底,說到湯底,材料除了精選的牛骨,還加入丁香、肉桂、荳蔻等香料提香,末了還加了一小塊冰糖調味,以牛味醇厚、清澈甜美為上。
湯底的熬製方法也有其獨特之處,除了要熬足一晚上,牛骨在熬湯之前還要過水去除表​​面的油膩,煲的過程要不斷去掉雜質。此外,一定要謹記掀開鍋蓋,讓牛骨的油氣蒸發出來,最後出來的就是牛肉清湯。上桌時還會附上辣椒、青檸等,這些都是帶起牛肉河粉味道的源泉。
越南菜著重於酸和辣,但是每個地方也有其獨特風味,例如北部有河粉,南部有生魚酸湯較為代表。越南菜北、中、南部各有不同,例如所謂的中越菜指得是順化一帶的美食,由於順化一直是歷代王朝的古都,因此中越的菜不少是來自皇宮內的佳餚,其特色也就是小盤且精緻。雖然各地口味不盡相同,但不管到哪,不變的是到處都有“牛肉河粉”及“春捲”,再加上每餐必備的沾料“魚露”。 Pho Hong Tam也匯集了越南料理的各種特色。
老闆特別向我們介紹了店裏最受歡迎的越南生牛肉河粉。爲什麽是“生”牛肉河粉呢?因為其實剛做好時牛肉爲了保持鮮嫩的口感其實還是半生不熟的狀態,需要稍微再湯汁里浸泡一會兒才會熟透。而且這樣的牛肉也不會太老而喪失口感和鮮甜。此外不要忽略了放在桌旁的薄荷、香菜和檸檬。根據自己的口味,適當的將這些佐料放入河粉中會更加美味。牛肉的肉片比較厚實而且軟硬適中,搭配著大骨熬製的湯汁真是絕配。濃鬱的牛肉湯汁,在添加了些許的檸檬汁後牛肉的香甜中帶著淡淡的酸甜味。夏天裡吃起來要是在搭上一杯店裏特質的凍飲的話,那種痛快,恐怕只有你親身體驗過才能明白。
